The meat we use in our restaurant is "Tajima Beef" and "Tajima Gen", which we carefully selected and arrived at by visiting producers all over Japan.
The meat itself is enjoyed in a variety of cooking methods and dishes, including yakiniku (grilled meat).
Among them, "Tajima Gen" has a good balance of lean meat and fat due to its low melting point,
